• 1 gallon raw milk @ 85°
• 4 oz mesophilic starter for 1 hour
• ¼ rennet tablet for 1 hour
• Cut and heat 92° - 102°
• Press 20 lbs 1 hour per side, then 40 lbs for 3+ hours
